Zydeco Chicken

6 5-6 ounce chicken breasts, boneless, skinless

1/2 cup No-Stick Grilling Marinade for Poultry (page xxx)

2 tsp poultry seasoning (page xxx)

2 Tbl olive oil

8 ounces andouille sausage, cut in half lengthwise, then sliced into 1/4” thick slices

2 cups sliced button mushrooms

2 tsp fresh garlic, minced

2 cups Creole cream sauce (page xxx)

3/4 cup green onions, sliced thin

1 Tbl fresh parsley, chopped

Using a pastry brush, coat the chicken breast with the marinade. Refrigerate 30 minutes. Sprinkle the breast with the poultry seasoning.

Prepare the grill. Cook chicken breasts over direct high heat for 10-12 minutes, turning once during the grilling process.

Heat olive oil in a large sauté pan over high heat. Place the sausage in the hot oil and cook 6-7 minutes, stirring every 2-3 minutes. Add sliced mushrooms and cook 5 minutes more. Lower the heat to medium and add the garlic. Cook for 3 minutes more. Add the Creole cream sauce and bring mixture to a simmer. Cook until the mixture becomes slightly thick. Stir in green onions and fresh parsley and remove from the heat.

Place the chicken breasts on serving dishes and top each one with 1/3-1/2 cup of the topping.

Yield: 6 servings

I woke every morning and headed into town for breakfast. I would imagine Gatlinburg has more pancake houses per capita than any place on the planet. My problem is that I never found a good-tasting pancake until I happened across sweet potato pancakes at one of the pancake houses. We serve a version of this recipe at The Midtowner. The Cinnamon Cream Syrup is a must.
