Smoked Salmon and Watercress Sandwiches

Ingredients

8 ounces cream cheese, softened

2 Tbsp capers, rinsed and chopped

1 Tbsp shallot, minced

1 Tbsp fresh dill, chopped

2 tsp lemon juice

6 ounces smoked salmon, chopped fine

1 bunch watercress, rinsed and dried very well

10 slices rye bread

Instructions

Using an electric mixer, whip the cream cheese until it is light and fluffy. Add in the capers, shallot, dill and lemon juice and mix well. Using a rubber spatula, fold in the smoked salmon pieces.

Divide the cream cheese mixture onto five slices of the bread and spread it evenly to the sides. Remove any large stems from the water cress, and top the cream mixture with a thin layer of watercress.Top each sandwich with the remaining slices of bread. Cut the crusts from the sandwiches and cut each sandwich into 3 rectangles. Cover well and refrigerate until needed.

Honey Bundt Cake

This bundt cake brings back memories of family gatherings on Bellewood Drive where sweets were as much a part of the celebration as the presents under the tree. The warm notes of cinnamon and honey make it a natural fit for holiday mornings or as the perfect finish to a Christmas feast. The pomegranate glaze adds a bright, tart finish that keeps things interesting. Make sure to grease every nook and cranny of your bundt pan thoroughly. Use butter and dust with flour for a clean release. Also, letting the cake cool for a solid twenty minutes before flipping is key to avoiding a sticky mess.
