Basic Muffin Mix

Ingredients

1 ½ cups all-purpose flour
½ cup sugar
½ teaspoon salt
2 teaspoons baking powder
2 each eggs
½ cup milk
¼ cup butter, unsalted, melted
½ teaspoon vanilla extract
¾ cup blueberries(or other fruit)

Instructions

(This can be substituted with a white cake mix)

Makes 12 each

Sift together flour, sugar, salt, and baking powder.

  • In a separate bowl, beat the eggs, and then add the milk, melted butter, and vanilla extract.
  • Add the egg mixture to the dry ingredients and stir until just moistened.
  • Fold in any fruit at this point.  Do not overmix.  The batter should be somewhat lumpy.
