Cheddar Rice Cookies

These can be prepared to the just-before-baking stage and frozen. Perfect when served at an afternoon tea.

Ingredients

2 cups flour

1 /4 tsp Creole seasoning

1 /2 tsp dehydrated onion

1 /8 tsp fresh ground black pepper

1 /4 tsp salt

1 cup unsalted butter, softened

1 /2 pound extra sharp cheddar cheese

1 /4 tsp hot sauce

2 cups Rice Krispies

Instructions

Preheat the oven to 325.

Combine flour and dry seasonings in a mixing bowl and blend well.

Place butter, cheese, hot sauce, and Rice Krispies in the bowl of an electric mixer. Using the paddle attachment, blend mixture, slowly adding flour and seasonings, until all flour is incorporated and moistened.

Form into small balls (approx. 1 /4 – 1 /2 ounce) and place on a baking sheet. Bake 15- 20 minutes.

Yield: 60-70 crackers

Sweet Potato Pancakes

I ate my first sweet potato pancake during my only visit to Gatlinburg, Tennessee. My family, along with another couple and their young children rented a cabin in the mountains during spring break. I woke every morning and headed into town for breakfast. I would imagine Gatlinburg has more pancake houses per capita than any place on the planet. My problem is that I never found a good-tasting pancake until I happened across sweet potato pancakes at one of the pancake houses. We serve a version of this recipe at The Midtowner. The Cinnamon Cream Syrup is a must.
