BBQ Chicken Pizza

Ingredients

1 Tbl olive oil

1 cup yellow onion, julienne

1 tsp kosher salt

1/2 tsp fresh ground black pepper

1 Tbl garlic, minced

3/4 pound fully cooked grilled chicken, small dice

1 cup BBQ sauce-divided

1 cup roasted red bell pepper, cut into long strips

2 1/2 cups mozzarella cheese

6 Pizza Crusts, prepared and pre grilled

Instructions

In a large skillet, heat olive oil over medium heat. Place the onions, salt and pepper in the heated oil and lower the heat. Cook 12-15minutes, stirring often. Onions should caramelize and become brown, but not burn. Add the garlic and cook 3 minutes more.

Combine the onion mixture, chicken, and half of the BBQ sauce in a mixing bowl. Brush the remaining barbecue sauce on the top of each prepared pizza crust. Distribute the chicken mixture over the barbecue sauce. Combine the cheese. Top each pizza with the cheese mixture. Divide the roasted bell pepper strips over the top of the cheese.

Prepare the grill. Cook the pizzas, covered, over indirect medium heat or in a 400 degree oven until the topping is hot and the cheeses have melted.

Allow the pizzas to cool slightly before cutting.

Yield: 6 servings

Sweet Potato Pancakes

I ate my first sweet potato pancake during my only visit to Gatlinburg, Tennessee. My family, along with another couple and their young children rented a cabin in the mountains during spring break. I woke every morning and headed into town for breakfast. I would imagine Gatlinburg has more pancake houses per capita than any place on the planet. My problem is that I never found a good-tasting pancake until I happened across sweet potato pancakes at one of the pancake houses. We serve a version of this recipe at The Midtowner. The Cinnamon Cream Syrup is a must.
